Quinoa (Chenopodium quinoa) is not really a cereal, but a herbaceous plant typical of the Andean region of the same family as spinach and beet. Cultivated and consumed as early as 5000 years ago by the pre-Colombian Andean civilizations and defined by the Inca as "chisiya mama" or "mother of all seeds". A curiosity: due to their characteristics, its grains have also been selected by NASA to feed astronauts on a mission. Quinoa flour is obtained by grinding the seeds.
