• Dpp-iv peptidase , is very effective in breaking down gluten;
• Glucoamylase, an enzymatic component dedicated to the breakdown of carbohydrates and in particular of polysaccharides (long carbohydrate chains);
• Amylase , breaks down carbohydrates such as starch and glycogen, but also a large part of the polysaccharides;
• Protease , for the breakdown of the protein component.
